Thai Cucumber Salad with Peanuts

This is a great salad to make when your garden gives you too many cucumbers, but it's also worth buying cucumbers to make!

Servings: 2

For the Salad

1/4 Red Onion, very thinly sliced
1 Teaspoon Sesame Seeds
1 Large English Cucumbers, halved lengthwise, seeded and sliced crosswise 1/4-inch thick
1/8 Cup Packed Chopped Fresh Cilantro
1/4 Cup Salted Peanuts (we like to use the Asian spiced peanuts)
1/2 Large Jalapeño Pepper, seeded and minced (or use 1-2 Thai chiles for more heat)
1/8 Teaspoon Salt

For the Dressing

1/8 Cup Fresh Lime Juice, from 2-3 limes
1 Tablespoon Olive Oil
3/4 Tablespoon Fish Sauce
1 Tablespoon Sugar
1 Garlic Clove, minced

  • Place the onions in a small bowl of cold water. Let sit for ten minutes, then drain well and pat dry with a paper towel.
  • Toast the sesame seeds, let cool
  • Make the dressing: In the QuickMix, add the lime juice, oil, fish sauce, sugar, and garlic and shake well.
  • Add the drained red onions, cucumbers, cilantro, peanuts, sesame seeds and jalapeño pepper to a large bowl.
  • Pour the dressing over the salad and toss.
  • Taste and add the salt if necessary.
  • Serve the salad within 30 minutes.
