This dish is good enough for anytime, and even for company, but it's particularly wonderful when you're in the Dukan Diet Attack Phase when you can eat only low-fat protein, and not much else.

1 Pound Prawns, shelled and deveined with the shrimp cleaner
1/2 Jalapeno, shaved paper-thin with a Ceramic Slicer
1 Lemon, zested with the Better Zester and juiced with the Citrus Press
1 Tablespoon brandy
2 Cloves Garlic, minced with the Garlic Rocker
1 Tablespoon Sriracha
1/2 Teaspoon Chipotle Powder
1 Teaspoon Ground Cumin
Freshly Ground Sea Salt and Pepper, to taste
1 Tablespoon Nonfat Greek Yogurt
1 Tablespoon Nonfat Cottage Cheese
Chives, "chopped" with the Herb Scissors
- Put prawns in a Lékué Steamcase; shave jalapeno over prawns in Steamcase.
- Put lemon juice and zest, brandy, garlic, Sriracha and spices in a QuicKMix, and shake until blended.
- Pour mix over prawns and stir in.
- Let sit for at least an hour in the refrigerator
- While the prawns are marinating, blend the nonfat yogurt and the nonfat cottage until very smooth to make the Faux Fromage Frais; refrigerate
- Microwave prawns in Steamcase for 2 minutes at 1000W power (if your microwave is higher wattage, use a lower power percentage.)
- Stir and microwave another 3 minutes at 1000W power. Let sit for 1 minute.
- Remove prawns to 2 plates and whisk Faux Fromage Frais into the sauce that's left in the Steamcase.
- Spoon sauce over prawns. Sprinkle with chopped chives. Wish that you could have some bread or rice to sop up the extra sauce!
