The purpose of a skimmer is to get the scum (yes, terrible word) off the top of a soup, stew, sauce, jam or other liquid that you cook on the top of the stove. It can also be used to retrieve the good stuff from a pot of liquid.
Most skimmers do a barely adequate job of capturing the scum, because their holes are too large, and a lot of the scum just falls back into the liquid, meaning that you have to skim the scum more times than you would like. There is a better way...
When we first got the RSVP Endurance Skimmer to test, we thought: how can this do the job, it’s light and just doesn’t seem all that strong. Well, looks can be deceiving! This skimmer combines a finely woven stainless steel mesh base with an 18/8 stainless body in a very elegant package. The oval shape and slightly raised sides hold the scum in place as you scoop, and, as a bonus, it removes some of the fat from the surface as well. The oval shape also allows for easy reach into the corner of the pot. And it does an excellent job of retrieving the good stuff from a pot of liquid as well.
