Here is the mainstay breakfast that we ate every day on the Dukan Diet. It gives us protein and fiber, with virtually no fat or carbs...and it tastes good!
Servings: 2
1 Egg
4 Tablespoons Egg White
2 Tablespoons Faux Fromage Frais (a mixture of 50% of each of: nonfat Greek yogurt and nonfat cottage cheese, pureed in a blender)
4 Tablespoons Oat Bran
1 healthy squeeze of Sriracha (Thai hot chili sauce)
Salt and Pepper, to taste
2 Drops Olive Oil
- Beat egg and egg whites together, add Sriracha, salt and pepper. Use 1/2 mixture (~4T) for each galette.
- Mix eggs, 1T Faux fromage frais, and 2T oat bran together.
- Pour a few drops of olive oil in non-stick skillet, sspread with a silicone brush and heat over medium heat.
- Pour mixture into pan, swirl pan to spread mixture, heat until edges curl. Turn galette over and heat for a few minutes more. Remove from heat
- Repeat with second half of mixture
- Fill with filling of choice and roll
- Enjoy
Per Serving: 75 Calories; 3g Fat (33.6% calories from fat); 8g Protein; 6g Carbohydrate; 1g Dietary Fiber; 106mg Cholesterol; 85mg Sodium. Exchanges: 1/2 Grain(Starch); 1 Lean Meat; 1/2 Fat.
Notes:
The galette is easy to throw together, and you can fill it with anything. In the summer, some strawberries with more fromage frais, or with lean meat anytime. We usually fill ours with a slice of turkey and a little mustard (Kennedy likes Amora, Piper opts for a truffle mustard...just because).
