This is a very refreshing (and healthy) summer salad, and a great way to use up extra zucchini and cucumbers!
Servings: 6
2 Zucchini, shaved paper thin with the Gefu Handheld Ceramic Slicer
2 Pasilla Chile Peppers, shaved paper thin with the Gefu Handheld Ceramic Slicer
6 Tomatillos, husked and shaved paper thin with the Gefu Handheld Ceramic Slicer
1 Whole Lime, shaved paper thin with the Gefu Handheld Ceramic Slicer
1 Cucumber, shaved paper thin with the Gefu Handheld Ceramic Slicer
2 Tablespoons Extra Virgin Olive Oil
1/4 Cup Pistachio Nuts, shelled
1/4 Cup Parmesan Cheese
Salt and Pepper, to taste
6 Basil Leaves, sliced with the Herb Scissors
- Toss sliced zucchini, peppers, tomatillos, whole limes and cucumbers together.
- Add enough olive oil to moisten (the lime slices provide the acid)
- Toss with pistachios, parmesan cheese, salt & pepper
- Sprinkle with sliced basil leaves
