You don't always have to cover sweet potatoes with marshmallows. This is a grown-up version that uses lots of bourbon!
Servings: 12
3 1/4 Pounds Peeled Sweet Potato, boiled and mashed, riced or processed through a food mill
2 Orange Rinds, grated
2 Oranges, supremed, and then sections cut in half
2 Tablespoons Fresh Ginger Root, finely grated and mixed with 2T bourbon
3/8 Cup Brown Sugar
1 Cup Bourbon
3/8 Cup Half and Half
1/4 Cup Butter, melted
2 Teaspoons Salt
1/2 Cup Pecan Halves, coarsely chopped
Whole Pecans Halves, for garnish
Crystallized Ginger, minced for garnish
- Preheat oven to 350°
- Combine oranges and brown sugar and set aside
- Combine bourbon, half and half, butter, fresh ginger, salt, and rind in sauce pan and heat through
- Mix orange mixture and bourbon mixture into potatoes
- Add pecan halves and mix
- Pour into buttered dish and garnish with pecans and crystallized ginger
- Bake 35-40 min.
