Making this ricotta is not only easy, it produces great results, and is a wonderful ingredient in Lemon Ricotta Pancakes or Lemon Ricotta Cake.

4 C Milk (or 3C Milk and 1C Cream)
2 T Lemon Juice
1 t Salt
Additional Flavorings as You Whims Take You
- Heat milk in container uncovered in microwave at 800W for 12-14 minutes (on a 1200W microwave, power 6 for 14 minutes)
- Add lemon juice and salt and any seasonings and stir. Let rest for 30 minutes
- Strain in basket
- Put basket in container in fridge for 1 hour
- Unmold and serve or use.
