Why It's Cool: Compact size, wonderful slicing capability

As you may know, one of the key criteria when selecting a Cool Tool is that it is a home cook's substitute for a sous chef (chefs have sous chefs; home cooks have Cool Tools!). In other words, a Cool Tool does some of the prep work that makes cooking easier, more fun, and with better results. One item that fits squarely in that category is a good slicer, whether it's a countertop mandoline or a quick handheld double-edged slicer. The Gefu Adjustable Slicer is a wonderful combination of attractive features in a compact size:

Great replaceable blade: First, and probably most importantly, it has a very sharp - and replaceable! - Japanese steel blade that makes slicing easy work.
Adjustable: The blade locks flush in place for safe storage and, with an easy turn of the dial located in the handle, adjusts to 1mm, 2mm, 3mm, 4mm and 5mm thickness settings.
Effective food holder: Unlike the more common - and usually useless! - finger guard, the Gefu Slicer has a truly useful food holder (the slider) that assures consistent, easy slicing, while protecting your fingers. The bottom part of the slider fits into tracks on both sides of the Slicer bed, while the upper part holds the food securely in the slider. You can, of course, use the slicer without the food holder, but then we recommend using a kevlar glove to protect your tender fingers.
Easy glide surface: The Slicer bed has raised elevated glide lines to minimize stickiness and make the food glide (and therefore slice) more smoothly.
Ease of operation: An important design detail is the stop at the end of the Slicer bed, so the slider won’t fly off the end of the Slicer bed after each stroke.
Non skid: Finally, the Slicer has non-skid feet and a ridge underneath for tidy slicing: it fits neatly over a bowl so your slices are neatly contained; or you can just slice over your food (think thin garlic slices on pizza), as we often do.
