A sharp knife is a beautiful thing--it makes any cutting, slicing or chopping job easier and the results better and, if you cut yourself, it’s actually less painful and damaging with a sharp knife, because the cut is cleaner. So how do you sharpen your knives? Each blade is manufactured with a slightly different angle at the cutting edge, and sharpening to that exact angle is tricky: relying on your grip to keep the knife at the correct angle requires years of practice. So you tried those “guides” that hold the blade at the correct angle, but they were designed for one brand or style of knife and not the others. This unique piece of design, from really nice folks in Arkansas - the same folks who brought us the Better Zester - where sharpening has been a family business since 1886, is the first ever knife sharpening tool to allow you to reproduce the factory angle on all your knives, whether they are Asian or Euro. It has two main slots, for both coarse and fine sharpening, and the adjustment knob adjusts both to the desired angle, from 14º-24º. Instructions for specific knife brands and types are included, but if you don’t know, or aren’t sure, then follow the factory recommendations of 16º for Asian knives, and 20º for Euro or American brands. And the third slot is a fixed-angle set of ceramic stones specially designed for serrated knives, as well as everyday touchup of regular blades. The soft touch handle and the non-slip base assure safety and stability when working with your knives.
To use, you simply pull your knife through the slots and ...presto! … you’ll feel the smoothness of the blade improve as you complete several passes through first the coarse slot and then the fine slot. Your knife will have a consistently sharp edge, and unlike the guy at your local store or market, you won’t be grinding off excess metal by sharpening at the wrong angle, so your knife will live longer.
