This is a quick and delicious hors d'oeuvre that you can make with almost no notice (so long as you have a baguette).
Servings: 6-8
1 Baguette, sliced on an angle
1 Cup Thinly Sliced Onion (I use a mandoline to make this easy, but you can also chop the onions)
2 Cups Finely Grated Parmesan Cheese
1 Cup Mayonnaise, Best Foods seems to work best
1 Tablespoon Aglio Olio E Pepperoncino (optional)
- Preheat the broiler.
- Chop the onion into small dice (the Gefu Treppo makes this super easy).
- Mix the onion and parmesan and then mix in enough mayonnaise to bind the mixture together. Add the herbs, if using.
- Spread a generous layer of the mixture on each baguette, put in a single layer on a sheet pan, and broil for about 4 minutes, or until the bread is a little toasty and the mixture is browned on top.
- Wait a few minutes for this to cool, then...enjoy!
