Beaune Omelette

We've named this dish for the cookware merchants at the Saturday market in Beaune, France who demonstrated the nonstick features of their cookware by making an omelette using only shredded cheese and eggs. The results are easy and delicious!

Servings: 1

2-3 Tablespoons of grated Swiss or Gruyere cheese (we use Trader Joe's Shredded Swiss and Gruyere cheese to make this extra easy)

1 Egg

Freshly ground salt, pepper and seasonings, to taste

Truffle carpaccio slices (optional)

  • Crack an egg into the QuickMix, add freshly ground salt, pepper and other seasonings of choice (your only limit is your imagination!) cover and shake well to "whisk" the egg
  • Put a small non-stick skillet on low heat
  • Scatter half the cheese in the skillet
  • When the cheese has melted, add the egg and tilt the pan to cover the bottom of the pan with egg
  • Once the egg begins to set, add the remaining cheese in a stripe down the center of the egg
  • When the egg is almost, but not completely set, gently lift one side with a silicone spatula and roll it over the rest of the egg to start roling the omelette. Continue gently rolling the omelette until it forms an oblong, thentip it onto a plate and enjoy!
