A Couple of Tricks with Salmon Skin...

Salmon skin can be a bother, but it can also be a bonus!  Here are a few tricks:

To remove salmon skin before the salmon is cooked
, add a little fat to a non-stick skillet and sear the salmon, skin side down, for 3 minutes. Remove the salmon from the pan and use a thin spatula like the Mastrad Turner to separate the skin from the meat.

To make salmon skin bacon,
heat oil in a pan and sauté both sides of skin until crispy. Break into small pieces and salt and pepper to taste.  This makes a great addition to poached or roasted salmon.
